Abstract

Nutricional and therapeutic properties of unifloral honeys, has been considerable elevated the interes in customers, tus, it is necesary the caracterization parameters of this honeys. The main objective of the present work is determine if pigment constitute a differentiation criteria between honeys from differents flowers origin. For this purpose, it was taken different samples of each type of honey from the nectars of the Campanilla blanca, Mangle prieto, Leñatero y Romerillo de costa. For the pigment separation and quantitative analysis was applied various analytical methods as: thin layer chromatography (TLC), the CIE L* a* b system to determinate the color and the multiple variable statistic was used as a tool for the honey differentiation, this procedure shown that pigment don't constitute a fiable criteria for unifloral honeys differentiation because of their low concentration in the mixture.
