Jeyamkondan Subbiah

Dr. Jeyamkondan Subbiah is Professor and Head of the Department of Food Science at the University of Arkansas. He received his Ph.D. from Oklahoma State University. Previously he served as Kenneth E. Morrison Distinguished Professor of Food Engineering with joint appointments in the departments of Food Science & Technology and Biological Systems Engineering at the University of Nebraska-Lincoln. His research interest includes food safety engineering (low moisture food safety, radiofrequency processing, multiphysics modeling), instrumentation for food quality, and food-energy-water nexus. He has published over 110 peer-reviewed Journal articles, graduated 12 doctoral students and 18 masters students. He has used research-based instructional technologies such as just-in-time teaching, flipped classroom, and student response system in his teaching to improve students’ engagement. He completed an academic leadership training program, Lead21 in 2017-18.
