Shannon Thoits received both her B.S. in Environmental Science, and her Masters of Environmental Management in Corporate Sustainability, from Duke University's Nicholas School of the Environment. Shannon is a Sustainability Analyst at Apeel, and spends her time quantifying environmental metrics related to Apeel produce, and working across teams integrate sustainability into various company operations.
