(280f) Highly Sensitive Gluten Sensing Platform Based on Conducting Polymers Bio-Functionalized with R5 and G12 Gluten Antibodies

It is estimated that gluten intolerance and celiac disease affect around 1% of human population. Considering the scale of this issue and the lack of treatment, patients with gluten triggered immunologic disorders have to rely strictly on gluten free diet. Depending on the level of advancement inflammatory response in patients can be triggered even at very low (20 ppm and less) gluten levels. The lack of sufficient tests and gluten measuring methods makes it hard for patients affected by this disorder to function. Here we present two devices that determine amount of gluten in food samples. Chemiresitive device based on conducting polymer thin film functionalized with two gluten antibodies R5 and G12 is capable of sensing gliadin; one of the main proteins in gluten; with precision up to 20 ppm. The second device builds on the first one by adding a gate electrode to existing chemiresistor channel. This organic electrochemical transistor not only magnifies the signal, making measurement more sensitive and more precise, but also allows for miniaturization, which in result have great advantage in real applications. Low power consumption and sub-volt operation mode make both devices a great candidates for portable gluten analyzers.
