Abstract: The transglycosylation of stevioside (St) with hydrolyrtic cornstarch catalyzed by a new ¦Á-cyclodextrin glucanotransferase (CGTase) from Paneibacillus macerans
JFB05-01 was investigated. The effects of reaction parameters including
temperature, molar ratio of the reactants, substrate concentration, enzyme
loading and pH on the reaction were studied. Catalyzed by 10U CGTase /g St in 3 h, the highest conversion of stevioside of 54.5%
was obtained.
